Kath's Pumpkin Pie Yogurt
In February I was looking for new snack ideas as I started to lose a few lbs. I stumbled across Kath’s site and saw her pumpkin pie yogurt. It was intriguing to me. Admittedly, I hate pumpkin pie, but I thought that I would try it anyway as it would up the volume of my snack so much without adding a lot of calories.
That day was the greatest day of my winter.
I then had a serious addiction to this snack which I ate ever day for about a month, and probably will eat every day for about a month now that I had it again. I even made my fiance buy some cans of Libby’s pumpkin (the best kind out there trust me) so I could make it for a snack when I was visiting him. I have been waiting for the weather to get cold enough to warrant a pumpkin dish, and finally it has.
This afternoon I remembered just why it was so good, and along with those flavors the memories came rushing back too… daydreaming about how PB would one day propose and how life would be together….
I can’t promise you endless memories and dreams of your life ahead, but I can promise that you’ll love this healthy treat.
Here it is:
- 1/2 a cup canned pumpkin (80 grams) (I used 100 grams)
- 4 oz plain low-fat yogurt (I used 3 oz Fage 0%)
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 packet splenda (I didn’t add any sweetener)
And then there were my toppings.. I added the following:
- 4 crushed honey graham sticks
- 10 grams walnuts
- 7 g mini chocolate chips
- 5 raisins, for fun
- 1 tablespoon of Kashi Golean
This is seriously the best snack ever. I usually change up the toppings but keep the basic recipe almost the same. You must try this now!!!

You should try kath’s pumpkin pie – pumpkin, egg white, cinnamon, splenda, baking powder – it’s great 🙂
