Balsamic Glaze
Do you know how easy it is to make an amazing balsamic reduction? It is seriously the most simple recipe (if you can even call it that).
Pour some balsamic vinegar in a pot. Bring to a boil, and then simmer on low until it reduces. When we had all my cousins over this weekend we made a nice easy balsamic reduction/glaze and it was a hit! My SIL made it one night a few weeks ago and I’ve been waiting for the perfect moment to make it myself!
We topped grilled peppers with it:

(Side note: my tip to making the most delicious grilled veggies? After you wash and cut it up layer the pieces between paper towel and top with something heavy. The bitterness of the eggplant will get soaked up in the paper towel leaving you with the most amazing eggplant!!!! There was one teeny sad piece left at the end of the day!)
I also topped one of the grilled pizzas (post coming tomorrow I think?) with some fresh mozzarella and the balsamic glaze. That one was a hit too!
It was a great and restful although busy weekend. PB and I did lots of wedding tasks on Saturday and I am proud that we spent so much time doing it! It is hard to stay focused on this one night in our lives when the weather is so gorgeous and our time together on the weekends is so limited!

mmm I love balsamic glazes and never do it myself! It’s like such a special treat at a restaurant. So silly!
I love balsamic!! At a restaurant I eat at, they marinate portobello mushrooms in a sweet balsamic glaze – I basically lick my plate clean 🙂
