Gena's Raw Banana Soft Serve "Ice Cream"
I think my husband might be in love with Gena.
And it’s because of this:
I casually mentioned Gena’s banana soft serve one night- Yes, the one that first swept the blog world and then made it to thousands of TV watchers all over the U.S.- and he was EXCITED. I didn’t think it would be a dessert that would interest PB, as well, let’s face it, he never has dessert! However, he was really interested in trying this and peeled and froze all of our bananas on the spot. Hence, this breakfast last week.
According to Gena, “it’s the best soft serve ice cream you’ll ever taste, but it’s 100% raw, 100% vegan, 100% unprocessed, and 100% delicious. It’s also kid-friendly and ridiculously simple to make.”
Is she right? ABSOLUTELY.
That night, after dinner was cleaned up and we were relaxing on the couch, PB mentioned the banana soft serve again.
“So… uhhhh are you going to make that banana soft serve? I wouldn’t mind!!!”
Laughing along the way, I headed into the kitchen to make my husband the first dessert he has ever requested.
The ingredient list is simple: 2-3 bananas, frozen in chunks.
The directions? Even simpler: Put the frozen banana chunks in a food processor, turn it on, and let it run for 5 minutes or until the banana soft serve has reached the consistency you like.
Could it be any easier?
The resulting “ice cream” has the same cold, smooth texture as ice cream, and the flavor is reminiscent of a creamy banana milkshake. I bet that adding a dash of vanilla extract would make it less banana-y, but either way, it is a great substitution for the real thing! What I like most about it is that it is guilt-free. This “ice cream” is healthy and delicious. Gena is a culinary genius.
P.S. As I wrote this blog post PB came home from work and requested more banana soft serve! He loves it! I love it too, but I love him more!

Gena’s recipes are amaaaaazing!
I made this last night -so delicious! I was actually thinking afterwards that I should have added vanilla extract. I’m sure I’ll make it again soon and can try then!

If you like chocolate, try squirting a bit of TJ’s Midnight Moo Sauce in it next time…holy yum!

FYI to all: Not sure if I mentioned it but PB really likes it with frozen mango chunks too! Last night’s combo was 1 banana + 1/2 cup frozen mango, and it rocked.
