    I think the pumpkin cream sauce is my favorite part of this whole post… actually, the whole post is just jaw droppin’ amazing!

    It looks like so much work, but to make your own ravioli, I think it may just be worth it! Great job!

  2. I am in complete awe and also jealous of that KitchenAid pasta-making attachment. Pumpkin and/or Butternut Squash ravioli are my autumn lovefest. And that BRIE!! We need the brie recipe for Gossip Girl Mondays I think. Gina can be in charge.

    • @ToKissTheCook, Looks great ladies, take it from an Italian-American with more years than I care to mention in the kitchen. Love your style, but just a bit of advice on the equipment. I use a ravioli form. I have two, one for 12 at a time and one for 2.5″ large ravioli 10 at a time. You can find them at Fante’s in Philly (http://www.fantes.com/index.html), and they are the least expensive on the net. As to the KitchenAid attachment. Allow me to dissuade you from making such an expensive purchase in favor of the Marcato Atlas 150 or 180 (I have both) and two KitchenAid stand mixers as well. With the Atlas machines (the world’s most popular) you have precise control plus two cutting heads for about $70 (150) and $90 (180). Additional cutting heads are anywhere from $30 to maybe $50 (stay away from the ravioli maker). Moreover, if you have children or grandchildren (like me… 5 little ones from 9 mos. to 3 years who love to cook with Grampa), the human dynamic is not lost on the mechanization of the process. I know it sounds silly, but there is something quite spiritual about making pasta from scratch with children. I did it with my grandmothers, my father, even my sisters and brothers with the Atlas machines.

  11. What a terrific fall menu! I look forward to trying the recipe. You make it seem so easy. The sauce recipe is great, but since I do not eat dairy, I wonder if I could substitute soy creamer? I’ll let you know how it works!
