Crock Pot Chicken Breast
When the work day ends I am often scrambling around trying to get 10 things done at once. Cook dinner, start some laundry, write (ahem) wedding thank you cards (we have about 40% done..), paint my nails, go through the mail, etc etc. The list never ends.
Luckily, I found something in our kitchen a month ago that I didn’t even know we had:
A CROCK POT.
The crock pot can be an amazing tool for the working lady (or the working man). You can do a bit of prep work in the morning, throw everything in the pot, turn it on low and leave for the day. When you finish work the beautiful smell of dinner is calling you into the kitchen, and with just a few small additions dinner is ready.
Thanksgiving celebrations and Christmas cheer took over our long weekend, so this week I wasn’t as prepared as I usually am for dinner, and the crock pot came out. This recipe is so simple and easy, and you can add anything you want to make it yours: olives, cheese, vegetables, anything you would normally like with chicken!
Crock Pot Chicken Breast
Serves 3-4
Ingredients:
1 lb chicken breast, cut any way you like (mine were tenders)
1 tbs olive oil
14.5 oz can Italian cherry tomatoes*
1 tbs dried parsley
Dash of kosher salt + pepper
2-3 tbs freshly grated romano cheese
Directions:
In the morning: Heat oil in a large pan over high heat. Add the chicken breast and cook for 2 minutes on each side to sear. Layer the chicken breast at the bottom of a crock pot and add the cherry tomatoes with their juice, parsley, kosher salt and pepper. Cover the crock pot and set on low for about 6 hours.**
6 hours later: Set the crock pot to high and sprinkle the romano over the top. Meanwhile, finish preparing the rest of your dinner. In 5 minutes the chicken should be ready to eat!
*You can substitute diced or strained tomatoes.
**Be sure not to overcook the chicken. If it sits in the crock pot for more than 6 hours it might overcook.
We served ours with simple sides of steamed spinach and butternut squash mashed potatoes. It was a delicious and easy meal! Enjoy!

Looks like a great recipe! I don’t have luck with the crockpot – everything seems to overcook, but this looks so good, I might give it one more try… ๐
I love those cherry tomatoes. It looks like you roasted them, but that is how they turned out in the crock pot?
Jessica @ How Sweet It is: It was MAGIC out of the crock pot! Yes, they tasted roasted but they were just in the crock pot with the chicken all day. Please note though that they were canned Italian cherry tomatoes so I don’t know if that helped?

Winter is always the best time to use el CrockPot. So nice to come home from a long day of work, after travelling through the slush and snow, and having a warm comfort food dinner waiting!

I’m going to the gym after work today so instead of worrying about my husband starving to death while I’m out (ok, more likely, having a field day with a bag of cheese puffs), I threw a bunch of chili ingredients into our crock pot. This way dinner will be ready for the hubs while I’m gone… and for me, when I get home ๐

bookmarked! I LOVE my crock pot! used it yesterday and it is so nice to not have to hassle when getting home from work. i am gone for about 8 or 9 hours though so i will have to figure out a way to get my crock pot to turn on when i am 6 hours from home.. too bad it does not have a timer function!
@janetha, As long as your ingredients can sit for a few hours without spoiling, you can purchase a timer to have the crock pot turn on when you want it to. These timers aren’t very expensive. We use them for our lamps when we are on vacation so it looks like someone is home in the evenings.
i must get a crock pot! so many possibilities and so easy no hassle or anything! and that dish looks so good, the picture makes it look so delicious the bursting colors! ๐

I’ve always wanted a crockpot…it’s a must-have during these winter times, and for college students, me thinks. I’ll have to try this recipe if I ever get one.
