Salad with Grilled Chicken, Dried Cranberries & Wheat Croutons
Have I mentioned that I am trying to lose the wedding 4? I am down 3 lbs with 1 to go. It feels good to know that all of my pants fit me properly again. They were getting a little snug and that did not make me happy. Anyway, lots of you ask me for diet or weight loss tips, but I am not here today to share that with you.
Instead I share, The Salad of the Week.
I tend to make the same salad or salad-like meal for lunch every day for a week before moving on to a new combination. It has been a little lighter lately to help me in losing the newlywed weight gain.
For lunch this week I have been making the most amazing salad. Not only is it low in calories, it tastes so good I feel like I am eating a treat meal. I am always making a compromise between health and taste, and this salad finds a great balance for me. By grilling the chicken the night before, it only takes me about 10 minutes to put the whole salad together! Salads are so simple, but I find that the perfect mix of ingredients can really make one more special.

Salad with Grilled Chicken, Dried Cranberries, & Wheat Croutons
Serves 1
Ingredients:
3 cups of lettuce (I use a mix of arugula and butter lettuce)
3 oz grilled chicken breast
1 oz dried sweetened cranberries
1 oz wheat croutons
1.5 tbs Annie’s Balsamic Vinaigrette
Directions:
Put the lettuce in a large bowl and top with the chicken, cranberries, and croutons and pour the dressing on top. Toss together, and enjoy!

You salad looks great! Do you make your own croutons? I make them with whole wheat or ezekial bread and they are super easy!

I love cranberries in salads. They’re addicting though. I can’t keep Craisins in my house. They’re like Pringles to me. Once I pop, I can’t stop!

My weight always shifts between a few pounds. I am never bothered about as it usually goes back to normal. After my xmas holiday I was down a few pounds. If my weight does go up a little bit, I usually find it is due to not drinking enough water. So I always cautious of my water intake.
