I Love Salad! Challenge
How many of us wish we ate more servings of vegetables than we already do? Now, we can. We begin with the I Love Salad! Challenge.
Salads are such an easy way to get in several servings of vegetables in one meal.
Salads can also become a meal when you add fun toppings.
Salads are easily customizable so you can have a new combination every day.
For the last week I have had a salad for lunch each day. Here is my favorite combination these days. From start to finish, it took only 5 minutes to assemble.
I challenge YOU to change up your every day salad to something new and different. Add different vegetables and toppings, and turn your salad into a fun and exciting meal. You can also read this blog for cooking and nutrition advice.
How do you participate? Take a photo of your salad(s) and email it/them to me at sabrina at rhodeygirltests dot com along with the ingredients that made the salad. Feel free to share a blog post where you wrote about the salad as well, if you are a blogger. I will assemble them all on the I Love Salad! Challenge page which you can visit by clicking on the photo of the salad in the right sidebar labeled “I Love Salad! Challenge“. Please feel free to forward this post to everyone you know- the more people participate, the more fun it will be! The goal is to start eating more salads and more creative and different salads.
The challenge begins today, April 15th and continues until Monday,Β May 17th. Feel free to submit as many salads or links to salads as you like. You don’t just have to submit your own salad creations! Salads eaten out at a restaurant or someone else’s house count too! Each submission will count as one entry for the challenge, and at the end of the challenge the person who submitted the most creative salad combination(s) will win a fun prize!
What’s the point? Vegetables are so important for our health, but so many people have difficulty getting enough servings and enough variety of vegetables a day. I hope that with this challenge you are encouraged to try new vegetables, new combinations, and ultimately eat more servings and more variety of vegetables a day!

I am totally joining. I hate vegetables. I need someone on my butt 24/7 to eat my veggies and this may work!
That avocado looks awesome. I *do* love a good salad — maybe this will inspire me to get more creative with them.

I love that you use the giant bowl! I use a pretty big Pyrex bowl and my husband always makes fun of me. Oh, and I don’t wash my pre-washed lettuce either.

I eat salads almost everyday for lunch but always the same thing (basically). Can’t wait to hear some new ideas. I’m particularly interested in incorporating berries into my salads because I know it can be done but I don’t know what to pair it with.
i just ate a new salad today! oh my gosh, this could not have come at a better time! i just barely bought two huge containers of spring mix and spinach from costco because i decided i want to eat more salads. you read my mind, girl!

What a creative and fun idea! I work from home and typically eat salad for lunch, but I have to admit they are really boring! I can’t wait to get some inspiration from others!

Yum, sounds like a yummy challenge! I’m up for it – how funny, too…we must think alike, Sabrina, because I was going to have a salad for dinner tonight and I plan on having one everyday til the end of April! Count me in. π
I make salads for lunch all the time, but they are the same over and over again. I love huge huge salads too, so now I’ll have to try switching it up!
This is so awesome. I actually have been attempting to incorporate a salad into every lunch and dinner for a few weeks now. How fun!
YUM! I love salads with lots and lots of ‘stuff’ in them!! Off the top of my head one of my favorites is grilled corn cut off the cob and into a salad….so good in the summer with ripe tomatoes π

I will admit it’s been awhile since I made a really great salad. I may need to join in. I’m a bit of a carboholic though so mine usually include a little pasta or something along those lines.

@RhodeyGirlTests, I live on the East Side of Prov and love it! π I actually worked in Cranston for 2 years though — right off Pontiac Ave. And yes — Nick’s is amazing! One thing that I love about the Providence area is that there are so many great brunch places (my fave meal)!!
I was already planning on doing this when I went back to work next week so I”m totally in – starting on Monday. I’ll plan on it for sure 5 days a week. I’m really excited about putting together different ideas for salads that make me feel like I ate something substantial – something I often have a problem with! Great idea!
We have salads at almost every dinner meal in our house, love them and all the variety they can offer! Great challenge.
I always say that I love eating salad for lunch because I’m not as stressed to get in a ton of veggies for dinner. That way I just eat what I want for dinner without guilt π

Love this challenge and even though I didn’t see this yesterday I had a really good salad so I’m still on track! Sella Blu in Conshohocken has this wonderful Apple Salad with chopped apples, spiced sweet walnuts, spinach and feta. It was so yummy and filling. Will have to maybe go to my stand by of mixed greens, toasted nuts (some sort), balamic vinegarette and crasins since I didn’t plan but that’s ok. Have a great weekend!

FABBULOUS IDEAAAA when the weather starts getting warmer I always want more salad but I get so bored, so this challenge to add new ingredients will motivate me!

BTW, thanks for visiting my blog! Good to see another “Philly girl” in the blogosphere! In answer to your question, the crabcakes were part of my freezer stash that I am trying to dwindle down!! I believe they were from BJ’s. Very good. I have made my own crabcakes before, but I do use a little mayo (usually 1 tbsp. or so). I’ll keep an eye out for a mayo-free one for you π
I’m doing a salad challenge too! Trying to eat a salad every night for a week or two to boost my weight loss and motivation!
I had a pretty beastly salad via the Whole Foods salad bar today π Does that count? Haha. No seriously though I eat a lot of salads but they’re not the most creative. Time to put on my thinking cap now though!
