Diary of a Sweet Tooth’s Bread Pudding
Bread pudding studded with blueberries and Grand Marnier is the perfect dessert for a spring brunch… especially if one is not the best baker. Following recipes exactly as written is very difficult for me, so a dessert recipe that does not require specific measurements is a great compromise.
Ashton of Diary of a Sweet Tooth is a great baker and chef who kindly shared her recipe with me for the Easter lunch I hosted. I originally planned on making a basic strawberry shortcake (using ready made ladyfingers) but decided I wanted to make something a little different and perhaps a bit more special. My mother in law loves blueberries, so this dessert was a great addition to our lunch. I made the dish the night before the lunch and finished cooking them at dessert time, topping them with a nice scoop of light vanilla ice cream. Blueberry bread pudding with vanilla ice cream is a dessert that will be a mainstay for entertaining. Thanks for the dessert help, Ashton!
Diary of a Sweet Tooth: Basic Bread Pudding Recipe
My modifications:
1 day old whole wheat boule
2 cups skim milk
1 tablespoon Vanilla Extract
1 tablespoon Grand Marnier
2 eggs
1/2 cup sugar
2 cups blueberries
2 oz white chocolate
vanilla ice cream for serving

LOVE LOVE LOVE Bread Pudding!! It’s such a comforting dessert! That recipe doesn’t even look all that bad with skim milk, I feel like ususally it’s made with cream…etc. Looks delicious!

@Heather (Heather’s Dish), If you almost cried at the photo, you would have sobbed at the flavor haha. It was so delicious- sweet but not overly so, and crunchy and soft at same time. I want to make more asap!

Can you believe I have never had bread pudding? Not a picky eater at all and someone who will trying ANYTHING, the idea of bread pudding does not sound good to me. I may just have to try your recipe because I love blueberries, and of course alcohol!!
@Julie @ Pickley Pear, I do believe it. I hated bread pudding until 2 years ago (without every trying it). I think it was a texture thing? But now that I’ve tried it I am obsessed- especially with all the blueberries! Let me know if you try it and how you like it!
