Simple Summer Salad
Big summer salads make me happy. Even at 10:30 AM.
Somehow I am not adjusting to the time change very well. PB and I went to bed at 9:30 PM and got up at 5:00 AM this morning. We exercised, made the bed, showered, worked a bit, had breakfast together, and it was still only 7 AM! I am really enjoying the different schedule because the quiet time in the morning with my husband is so nice. I love talking without the distraction of tv or the day’s work running through our minds. It has been a very peaceful way to start our day, and I hope we can keep it up, even if it means keeping an unusual schedule. Mini shout out to my husband, who will have been my husband for a year in just two weeks! Our first anniversary is already coming up!

By 10:30 today I was so hungry I was HANGRY, and I had to eat my lunch right then. I threw together some of my favorite salad staples to make a yummy salad!
Simple Summer Salad
Serves 1 hungry girl
Ingredients:
2 cups fresh arugula
2 cups romaine lettuce
1/4 avocado, diced
1/2 cup cannellini beans
1/2 oz crushed smoked almonds
1 oz Athenos feta, crumbled
dressing of your choice
Directions:
Toss together and enjoy!
The Change for the Feta challenge is already so much fun. I love that I know that pretty much every day for the month of July I will not only be eating a salad, but I will be topping it with one of my favorite cheeses, feta!!
I enjoyed my salad in one of my new bowls PB bought me in Jerusalem. During our Jordan trip we took 2 days to pop over to see the holy sites. Of course while there we had to buy some gorgeous Jerusalem bowls.
I also had a cup of hot tea in my new Starbucks’ Jordan mug. I saw the mug and had to have it. It is huge, but perfect for me.
Does your Starbucks have signature mugs? If so, please share the name of the place! I think I want to start a collection of Starbucks’ mugs from all the places we visit!

I have a Philadelphia mug and one from Mykonos from our Greek trip. I know you can get Paris and London ones as well.

Funny, but the only time I thought about getting one was in Canada… where I live… because going to the ‘Bucks overseas is crazy. When I lived in Germany, I went once and almost died: just take off the dollar sign and add a euro, and THAT’S what they want me to pay??? No thanks! But a Banff mug would make me think of the mountains and smile…

I have a collection of Starbucks mugs. I only get them from important places that have meaning.
Love big coffee mugs! What a cool idea to collect them on your travels! My older sister’s husband collects shot glasses from Hard Rock Cafes.
I collect the Starbucks mugs also. It’s a great way to remember your travels and a great convo starter when it’s time for coffee at a party.
Austin does. I have a mug and a tumbler. I’ve also seen them in San Antonio, Houston, and Dallas. I’ve been meaning to get a SA one, it’s my hometown

Yes! Our Starbucks has special Chile mugs. The old version had Torres del Paine on it and sadly, I never bought one. The new version of the mug has Moi statues from Easter Island and scenery from Valpariso.
