The Pioneer Woman’s Cinnamon Rolls
The Pioneer Woman’s recipe for cinnamon rolls is simple and brilliant, leaving lots of room for error that still results in a fantastic gooey cinnamon roll. When my brother and my sister in law came to visit for Thanksgiving, I knew I absolutely had to try this recipe. Cinnamon rolls are my brother’s absolute favorite treat, but I don’t think he’s ever had them homemade!!!! I found the recipe to be really easy to follow, and although I made a few blips here and there, they turned out. Each cinnamon roll was covered in thick, beautiful frosting (or icing, what’s the difference?! Can you tell I am not a baker?!), and when you bit into one you were greeted with a chewy and soft center dotted with just enough cinnamon to make its presence known.
After a full breakfast I still couldn’t help but sample 3 to make sure they came out good enough for my brother, and they passed both my and his taste test! I made half with lots of icing and half with just a bit of icing. I still can’t decide which I liked more.
The next time I make these (there will be a next time… and many times after that!) I will not roll out the dough as thin, and I will probably use 1/2 the amount of sugar for the filling. These were just a bit too sweet for my liking! And I bought the wrong size foil tins, so I’d make sure to buy the smaller size (regular round cake pan size). I think I’d also like to try some variations… possibly a nutella filling with a sprinkling of roasted hazelnuts? Or some cooked apples and cinnamon? The options are endless.
The Pioneer Woman’s Cinnamon Rolls

Makes app. 35 medium rolls
Ingredients:
2 C 2% milk
1/2 C vegetable oil
1/2 C sugar
1 tbsp active dry yeast
4 C flour
1/2 C flour
1/2 heaping tsp baking powder
1/2 scant tsp baking soda
1/2 tbsp salt
Filling:
1 C melted butter
scant 1/2 C sugar
1/2 C cinnamon
Frosting:
1/2 bag powdered sugar
1/4- 1/3 C milk
1 tsp vanilla
2 tbsp melted butter
pinch of salt
Mix whole milk, vegetable oil and sugar in a pan. Scald to 150 degrees. Let cool until lukewarm. Sprinkle in yeast and let sit. Then add 4 C flour, stir mixture together. Cover and let sit for one hour. Add 1/2 C flour, baking powder, baking soda, and salt. Stir mixture together.
Sprinkle surface generously with flour and form into a rectangle, roll the dough thin, maintaining a rectangular shape. Drizzle melted butter over dough. Sprinkle with sugar and cinnamon. Roll the dough toward you. Pinch the seam to seal it. Grease foil cake or pie pans. Cut rolls 3/4 to 1 inch thick and lay in greased pans. Cover the rolls and let sit for 30 minutes. Bake at 400 for 15 to 18 minutes.
Combine all frosting ingredients in a bowl and mix thoroughly. Generously drizzle frosting over warm rolls after they come out of the oven.

that’s one thing Ive noticed about The Pioneer Womans recipes, you always have to tweak them a bit, not a bad thing, just daunting for someone who doesn’t like to stray from the recipe for fear she may blow up the kitchen!

These were the very first recipe I made out of her cookbook when I got it last Christmas. So. amazing.
Another great recipe of hers, are her Chicken Wings. Absolutely not healthy in any way, but they are the.best.wings.ever.

These cinnamon rolls are amazing and this year was our 2nd year for making them the day after thanksgiving!!! Our whole family loves them! I think you could also put a bit less butter than she calls for 🙂 This is def. a recipe that will be a tradition in our family once or twice a year! 🙂 Ill have to try with less frosting too!

Yum. I’ve been craving the cinnamon rolls from like the tube (pillsbury) haha, havent had them in years!! But really there’s no reason I shouldnt make homemade ones 🙂 I think these are definintely happening soon!!
