PhillyBoy makes a watercress, radish & fennel salad
PhillyBoy makes the most interesting salads. Growing up we had iceberg salads every night dressed simply with lemon juice, olive oil and salt. I followed that tradition, adding the occasional baby spinach or tomato….
…until I met PB.
He would visit and take every vegetable out of my fridge to make a curiously fabulous salad. I learned to do the same, but he is still the master. He recently made a salad with watercress, radishes and fennel that was out of this world. Here is his recipe!
Watercress, radish, & fennel salad
Serves 2
Ingredients:
1 bunch watercress
6 radishes
1 fennel bulb
1 tbs dijon mustard
1 tbs lemon juice
2 tbs olive oil
kosher salt & pepper to taste
Directions:
Wash the watercress and cut off the stems. Wash the fennel and thinly slice. (video tutorial here). Wash the radishes and thinly slice. Place all of the vegetable in a salad bowl. In a separate bowl whisk together the mustard, lemon juice, and olive oil. Whisk in a bit of salt and pepper to taste. Pour over the vegetables and toss together. Enjoy!

I love that PB helps with meals!! This sounds fabulous- especially the dressing.
sooooo…there’s an opening for head chef at my house if PB wants to apply. the benefits are you and he get to share a twin bed but live close to the mountains. sounds like a win-win, right? 🙂

Great combination. I love the crunch of raw fennel. Some people think salads are all boring, but PB obviously knows how to turn opinions around! 🙂
I’m so impressed that your husband gets creative with salads! I try to keep my salads interesting but often go back to the same basic ingredients.
Cute. It’s funny because I am sure the stereotype is probably the other way around – that it is the girl getting the guy to try unique salads. Sounds fantastic!
I grew up with plain salads too, and always loved salads. I went outside the box from working at Wild Oats Market. So now I loved mixed greens with peppers,shredded carrots,european cucumber, peas and corn,tomato,beans,feta,sprouts and sometimes I will make whole wheat croutons or have a high fiber pita.
This looks so yummy, but I’m embarrassed to admit I’ve never had watercress, at least that I know of. What does it taste like?
Maybe PB can come teach my Fiance some dinner making skills….he is lacking in the kitchen department!

Great job on significantly lowering the amount you spend on groceries. I definately need to start keeping track of how much we spend. I’m sure we could save a ton. I am really bad about buying things and forgetting about them. My husband gets mad at me all the time when he finds two or three of the same item in the pantry!
