Ina’s zucchini pancakes
After I made Ina’s zucchini pancakes I immediately texted a few friends raving about it. You know you love a recipe when you do that.
This is why it’s a perfect dish (side or main) for the whole family:
1- It’s easy for small children with few teeth to eat.
2- It tastes delicious.
3- It’s inexpensive.
4- Adults love it too, especially ones who don’t love veggies.
5- You don’t have to buy any special ingredients.
6- It only takes a few minutes to prepare.
I skipped the red onion every time I’ve made this because I don’t care for it much. With simply grated zucchini, 6 T flour, 2 eggs, 1 teaspoon of baking powder and salt this dish is ready to go. Zucchini are abundant this time of year, and we always have the rest of the ingredients on hand.
Please make this dish and come back to report. I think it’s a winner that we will repeat often. Raffi, Trig and I all fight for the last zucchini pancake.
I love a lot of Ina’s recipes, and this zucchini pancake recipe is no exception.
Oh, but be aware that it’s a messy one!

Some Mediterranean versions add a hint of cheese and parsley- which also add an interesting flavor.
Awesome post 🙂 my mother and I have been making these for years (definitely more than 20 years now) – not sure how my mom got the recipe, but it has been family breakfast or dinner staple. I make it often in my house as well. I sometimes try adding a little feta cheese or ricotta to the batter, and it gives the pancakes a little twist. I have also added parmesan cheese. They go fabulously with hummus and pair super well with the tomatoes 🙂 Love, love, love!!!

Yum! I love zucchini but my husband is allergic so I never get any… maybe I’ll have to make some of these for myself and some “real” (gluten free dairy free, ha) pancakes for him!
